  15. 2-3 dried red chili
  16. 4-6 garlic cloves
  17. 1-1.5 teaspoon fenugreek seeds
  18. Spices:
  19. 2-3 teaspoon sambar powder
  20. Half teaspoon turmeric
  21. 2 teaspoon red chili powder
  22. Quarter teaspoon asafoetida
  23. Other:
  24. 2-3 cups tamarind broth
  25. 3 sprigs curry leaves
  26. Half cup cilantro
  27. Jaggery/sugar (to taste)

Instructions to make Sambar

  1. Wash and strain the dal at least 3 times then soak dal in water for 1 hour
  2. Pressure cook dal with 2 cups water (12 mins or 3 whistles)
  3. Heat oil and add mustard seeds, fenugreek, cumin, garlic, dried red chili, garlic and saute till fragrant
  4. Add all the veggies and mix well for about 5 mins. Add salt.
  5. Add 0.5x turmeric, 2x red chili, 2x sambar powder, 0.25 asafoetida
  6. Add enough tamarind broth to barely cover the veggies and some water
  7. Add jaggery/sugar
  8. Bring the broth to a boil
  9. Add curry leaves
  10. Add pressure cooked dal
  11. Add salt to taste
  12. Bring to boil and add cilantro
