  4. 1 tsp Baking powder
  5. 80 grams Margarine or Butter
  6. 80 grams Soft light brown sugar
  7. 2 Eggs

Instructions to make Banana Muffins

  1. [Prep] Sift the dry ingredients beforehand. Bring the eggs and margarine to room temperature. Preheat the oven to 180°C.
  2. [Prep] Mash the banana with a masher or fork.
  3. Add the warmed margarine to the soft brown sugar and mix until the mixture turns white.
  4. Add the eggs one at a time and mix well after each addition.
  5. Add the sifted dry ingredients to the mixture and mix until there are no lumps.
  6. This is how it should look when you finish mixing.
  7. Add the banana from Step 2 and mix well again. There should be a few small lumps left.
  8. Pour into the muffin or paper cups and bake for 15 minutes in a preheated oven.
  9. I baked these in brioche moulds and topped them with chocolate. They look really cute and makes good presents.
